And her fiance is quite a colorful young man! His name is Colin Sutherland, but he is better known by his nickname - "Thunderstrike!" He was by Knox's side on Friday night in the aftermath of her triumphant victory in court with a protective hand on her shoulder.
Sutherland plays in a band called "The Johnny Pumps."
And get this, he's a ghost hunter - we're not kidding! Twenty-seven-year-old Sutherland is out there pitching a new reality TV show called The Haunted Life where he and a buddy play concerts at haunted venues.
He's posted the project on a crowdfunding website to raise money, where he describes himself as a "musician, co-host, believer in all things ghosty, and magical unicorn of a human being."
Sutherland graduated from Sarah Lawrence in 2009 where he studied French and was active in the theater program, according to playbills with his bio.
Knox and Sutherland have known each other since middle school. They got reacquainted when he started writing to her while she was in prison. He moved from New York to Seattle to be close to her. They got engaged last month.
So, what's Knox up to these days? She writes theatre reviews and features for a local newspaper, the West Seattle Herald.
Knox's ex-boyfriend, Raffaele Sollecito, was also cleared of the charges that they murdered Knox's roommate, Meredith Kercher.
"I'm very happy for her, I really believe in her innocence," he said.
He told the Today show he hasn't spoken to Knox in more than a year and doesn't plan to.
According to her attorney, she also plans to return to Italy to write a book about the Italian Justice System.
