The men are dwarfed by the plane, which is the world's largest passenger jet.
The spectacular air show took months off preparations, XDubai said as it shared the video to YouTube.
"Over the last three months, Emirates and the Jetman Dubai teams worked closely to diligently plan and coordinate every detail of this project," it said.
In another video that Emirates shared to Facebook, Rossy likened the feat to mosquitoes flying with an eagle.

"We trained ourselves much as possible but then when we get into the helicopter there is this part [that's] unknown," Reffet, his protege, added.
It's not the first time the duo has taken to the skies. In May, they flew over Dubai at 120 miles per hour. Rossy flew over Japan's Mount Fuji in 2013 and above Rio de Janeiro in 2012.
